First paragraph - because he's a violent person. Nothing rational going on.

Second paragraph - then you fall down cut your arm, and it gets infected. You don't have any antibiotics and you die from an infection that a 20 minute trip to urgent care in a functional society would have fixed up. In the 1800's, there were some legendary hard men who did some real hardscrabble things - a lot of that was just dumb luck as much as grit. A lot of very gritty men just got a bit unlucky and died.

Third paragraph - indeed. I don't need to know how to hunt a deer. I just need to wait for you to hunt a deer and then shoot you. And really, it's not that hard to bag a deer - there are lots of things you aren't allowed to do with a fish and game license that hungry people won't give a shit about. Traps, trawler nets, etc...   Catch limits? With copious amounts of factory farmed food out of the equation, wild game populations would crash very fast. (i probably would be best served letting you clean and butcher that deer tbh)
