We have had this conversation before. I thought of it earlier this evening when I bought some washed eggs and subsequently put them in my refrigerator.

Cheddar can be aged for many years and remains cheddar. Cheshire is generally considered a different cheese, and is not available to me locally. So I would like to know how I can take some run of the mill cheddar and make it into Cheshire in the comfort of my own home.

I found some Muenster at Aldi. It will stay refrigerated.

To turn cheddar flaky, leave it on a shelf for a few months. If you're willing to spend an extra $1.69, leave one there for couple of years and let me know what happens.

My shelf is in the basement, and maintains a more constant temperature than the above ground portions of the house. But it's never as cold as 55°.

I also found it interesting the first article I clicked on said that. I quit reading before anyone explained (if they ever did) the point of the newspaper and foil and tape for already sealed up cheese but I’m gonna give this a try. The aldi blocks of cheese are a staple around here but they certainly aren’t gourmet. I bought a bit of 9 year cheddar ($40 a lb I think it was) last summer on vacation but not looking to do that regularly.
