The key to Hooters glory is going to corporate stores. Most of the franchises are hot garbage. The one in Orland Park is always good.
The concept is beyond cringey for this day and age and the girls usually aren’t even cute anymore, but properly done Hooters wings alongside curly fries with nacho cheese are 🔥🔥🔥
Their sauces are unique as well. I like Hot, 3 Mile Island, and Spicy Garlic. The Daytona wings are really good too.
As far as doing wings at home, you can grill them slow at the beginning to start to render some fat and add smoke flavor but they need to be finished above 325 or you’ll have gross rubbery skin. I usually sauce after the cook.
One thing I’m going to do now with the pellet grill with the propane side burner is smoke the wings then get some oil hot on the side burner and fry them for a few mins at the end to crisp them up. Then toss in whatever sauce people want. Should be the best of both worlds, albeit a bit more messy.
