Glyphosate is sprayed early in the season and makes zero contact with the final product. And it’s water soluble, no residue whatsoever.

I grew up on a farm and vividly remember when Roundup Ready beans came out in 1996, it was a godsend because we didn’t have to walk beans anymore.
They told us it broke down quickly and was water soluble and completely harmless. And you’re right, most is applied early but people still use it to desiccate crops before harvest (as well as paraquat) and don’t give a fuck about any labeling. It’s ok to spray paraquat 15 days or more before harvest of soybeans. I stood in a field with a farmer two weeks ago who dessicates all of his soybeans with it so he can control senescence (and thus moisture at harvest so they don’t get too dry and shatter). That shit hasn’t gone anywhere in 15 days. But it’s legal.
I used to think the exact same way you do. I worked for a seed company that published these studies showing how GMO crops (particularly Roundup) saved so much other toxic chemicals that it would fill a train from NY to LA and that was back in the mid 2000s.
But come to find out that wasn’t really the truth, and glyphosate residues can be found in an alarming number of foods in the US. It persists in the soil.
There’s no real consensus on what’s even safe—it’s pretty widely believed to be an endocrine disruptor—and if you look at what’s happened to the health of our population the last 30 years, there’s more than just poor dietary decisions being made. There’s something seriously wrong with what we are eating.
I don’t think glyphosate is 100% to blame by any means, but I’ve certainly come around to the idea that it’s partially to blame. They don’t have these problems in Europe, and they don’t do RR GMOs there. At least nowhere on the scale that we do.
